Vineyard Stays Cooking Class: Pasta Verde Party

Join ONX Vineyard Stays & Chef Candice Custodio on Wednesday, May 6th, from 6 to 8PM for a Peruvian cooking experience celebrating tallarines verdes—one of Peru’s most iconic and beloved pasta and sauce dishes. In this immersive, hands-on class, you’ll learn step-by-step how to prepare fresh handmade pasta and build tallarines verdes from the ground up. Tallarines verdes is a silky, herb-forward green sauce rooted in tradition, made with spinach, fresh herbs, cheese, milk, and aromatics—luxurious, vibrant, and deeply comforting without feeling heavy. Guests will begin by mixing fresh pasta dough to take home, then work with pre-rested dough during the class to roll, cut, and cook noodles by hand. Together with Chef Candice, you’ll build the green sauce on the stove, learning how to season intuitively, balance flavors by feel, and achieve a creamy texture that lets the herbs shine. The finished dish will be enjoyed with crispy chicken cutlets, bringing richness and contrast to the plate. A small starter and a sweet finish will round out the evening. Throughout the class, Chef Candice will share professional techniques, cultural context, and storytelling woven naturally into the cooking process—giving you the confidence and skills to recreate this dish at home while understanding its tradition. The experience will be thoughtfully paired with ONX wines, selected to complement the dish’s herbaceous flavors and elevate every bite. No prior cooking experience is required.
