Join ONX Vineyard Stays + Chef Debbie Dugan on Wednesday, March 11th, from 6 to 8PM for a French cooking experience that celebrates classic flavors, timeless technique, and the art of pairing food and wine. In this immersive, hands-on class, guests will explore a trio of beloved French dishes that highlight the elegance and comfort at the heart of French cuisine. The evening begins with a bright, seasonal salad of organic baby lettuce, roasted golden beets, crisp apples, feta, and roasted pistachios, tossed in a Champagne vinaigrette—a natural pairing moment that sets the tone for the night. From there, you’ll prepare roasted organic duck breast, a staple of French cooking known for its rich flavor and beautifully crisp skin. The duck will be served with Gratin Dauphinois, the iconic potato dish from southeastern France, prized for its creamy layers and simple ingredients, alongside tender poached asparagus. Each element is designed to showcase balance, richness, and restraint—hallmarks of French culinary tradition. To finish, guests will create and enjoy crème brûlée, one of France’s most celebrated desserts, with its silky custard and signature caramelized sugar crust providing a sweet, dramatic finale. Throughout the class, Chef Debbie will share professional techniques, culinary history, and approachable tips for recreating these dishes at home, while guests enjoy thoughtfully selected ONX wines paired to complement each course—highlighting acidity with the salad, structure and depth with the duck, and elegance with dessert to elevate every bite.
